Blink and December is here already and with it,the festive spirit too.With a definite chill in the air and a holiday atmosphere all around,this has got to be my favorite month of the year.I shook myself and got out of my baking sabbatical,for Christmas is too dear and precious that I had to start baking!
I had bookmarked these cookies long back from Simply Recipes and these turned out delicious.They look so Christmas-ssy too!
A simple cookie with added crunch from cashewnuts and flavored with vanilla and drenched in powdered sugar,these make for a great homemade gift as well.
Eggless Snowball Cookies
Recipe source - Simply Recipes
Ingredients(makes 22-24 cookies)
Flour/Maida - 1 cup
Cashewnut - 3/4 cup,chopped
Sugar - 3 tbsp
Salt - a pinch
Butter - 113 gms
Vanilla - 1 tsp
Powdered sugar - 1 cup
Method
Preheat oven to 150C.
In a mixing bowl,mix together the dry ingredients - flour,cashewnuts,sugar and salt.
Mix in butter and vanilla and knead lightly with your fingertips till you get a smooth dough.
Make small balls of the dough and place on a cookie tray with an inch of a space between each cookies.
Bake for 30-35 minutes.
As soon as the cookies are baked,place them on a wire rack and when they are still warm but cool enough to handle,roll them in powdered sugar.
Place them back on the wire rack to cool completely.

Notes
- The original recipe called for Walnuts which I replaced with cashew nuts,I reduced the amount used too since I didn't have enough cashews.This resulted in a cookie with a cashew crunch in every bite.
- I felt the dough was a bit sticky and hence refrigerated the dough for 20 minutes till it was sturdy enough to handle,don't be tempted to add more flour since it would result in hard cookies.
