I am honoured to present before you the yummilicious round-up of Kerala Kitchen for the month of September.Onam was celebrated in much pomp and glory during the month so there are an array of traditional dishes for you.
Kerala cuisine is incomplete without non-vegetarian dishes but Easycooking is a Vegetarian blog:).Since I forgot to mention in the rules about this and since it would not be fair if I do not publish the non-veg entries,you can see non-veg dishes for the first time in this blog.This,of course is a one off situation:)

Ingredients
Toor dal-1/2 cup
Onion- 1 large
Green chillies-2 nos
Turmeric powder-1/2 tsp
Ladies finger-4 medium
Brinjal-1 medium
Carrot-1 medium
Drumsticks-2 large
Potato-1 large
Tomato-2 large
Yam-50 gm
Beans-3 nos
Snake guard-1 small
Bitterguard-1small
(all the vegetables sliced into 2 inch pieces longitudinally)
Tamarind - small lemon sized ball
For dry roasting
Grated coconut_2 tablespoon
Urad dal-1 teaspoon
Chana dal_1 teaspoon
Garlicpods-1
Curryleaves-3nos
Jeera-a pinch
Shallots-2 nos
Kashmiri chilli powder-2 tbsp
Corianderpowder-4tbsp
Fenugreek powder-1tsp
Hing-1 tsp
For seasoning
Oil-i1tbsp
Mustard seeds-1tsp
Redchilli-2 nos
Curry leaves-few
Shallots-2 chopped
For garnishing
Coriander leaves_chopped 2 springs
METHOD
Pressure cook toordal,sliced onions and greenchillies with turmileric powder until 3 whistles
Mix together sliced vegetables except ladies finger and tomato
Again pressure cook for 1 whistle
Dry roast the ingredients and grind to a smooth paste
Mix together with the cooked vegetables and toor dal and bring to boil
Add ladies finger and tomato sauted in oil
Extract the tamarind juice and add to it
Finally add the hing powder simmer it for 5minutes
Season it and garnish with chopped coriander leaves
Now the sambar is ready to be served
Your attention please:
Do not over roast the ingredients
While dry roasting,add the powders after the flame is switched off
The dal should be well cooked
Small amount of grated jaggery will add to the taste
