Kiwi Fruit Cake



I am not a fruits person.Except for mangoes and maybe apples,I can happily live without following the one fruit per day rule.As expected,Ajay is very particular about the fruit basket being always full and replenishes it even before the whole lot gets over.In fact,whenever one of the fruits gets rotten or get discoloured,he puts the blame on me and says I did not have my share and hence..

Ever since I started baking with fruits though,the scenario has changed.It is me who stock up on bananas,oranges,strawberry and pineapple now..:).Who knows when I get an urge to bake with these..:).Ajay sometimes comes around to have a banana or two and he is left gaping at these cute banana muffins..:)

I had not had a Kiwi fruit till date and was really curious to see how it tastes.Well,I would say it really is an acquired taste and not all[me included] would like it.But they don’t come cheap and I had to find a way to use them.I pulled out my recently acquired Cake book and Voila..a Kiwi Fruit Cake..which seemed perfect for the situation.I have to say the fruit tastes better in the cake.Ajay liked it so much and even bought a tub of Vanilla ice-cream saying that it would taste better with ice-cream and it did! A slice of cake with a dollop of ice-cream and we were in Kiwi-Ice-cream heaven!!!



Kiwi Fruit Cake
Recipe from 1 Mix,50 Cakes

Ingredients [I halved the measures to make a loaf cake]

Flour – 175 gms
Baking powder – 2 tsp
Butter,softened – 175 gms
Caster Sugar – 175 gms
Eggs – 3,beaten
Vanilla extract – 1 tsp
Kiwi Fruit – 2,peeled and chopped-plus extra slices to decorate

Method

Preheat the oven to 160C.
Grease and line a loaf tin or an 8’ round tin.
Sift the flour and baking powder into a large bowl and add the butter,caster sugar,eggs and vanilla extract.
Beat well until the mixture is smooth,then stir in half the chopped kiwi fruit.
Spoon the mixture into the prepared tin and smooth the surface with a palette knife.
Scatter over remaining chopped fruit.
Bake for about 1 hour or until risen,firm and golden brown.[Adjust the baking time accordingly if you are halving the recipe]
Leave to cool in tin for 10 minutes,then turn out and finish cooling on a wire rack.

The original recipe uses a Cream cheese Lemon frosting.But I had some White chocolate ganache,just enough for this cake,so I used that.
Spread the frosting over the cake and top with Kiwi fruit slices.I did some playing around with some dark chocolate ganache too:)

  8. U kno divya.... kiwi I love Kiwi fruit.... it was damn cheap when we ver in Abroad nd i ate loads of them... if i knew about the cake i wud have tried there nd then.... Now tht it costs more thn 30rs per fruit I get them once in a while...... once i get a Oven i pledge to try this out as it luks fantabulous

  11. I for one love the taste of kiwi but my siblings detest it... Kiwi ina a cake..This I need to make to taste it...Am curiuos on its flavour ina cake.

  29. very beautiful snaps!! I tried with other recipe which was for banana cake because i was having Self-Raising flour and having measuring cups only 4 measurement. Thank u so much for ur snaps. I saw different kiwi cake snaps, but i liked urs n had so many kiwis at home and so i tried kiwi, this is my first cake with SR flour, before that i tried vanilla cake mix.
    Today my sons playgroup celebrated Christmas party, so i took my kiwi cake without any frosting since i couldnt have enough time in morning. My friend told its so yummy!!
    Could u tell me one more suggestion? I put 1 and half cups SR flour n the batter was upto half of the pan, but it didnt rise up much, it was rising upto 3/4 of the pan only.I dont know how much it has to rise up, But it was soft and tasty, and since it was becoming brownish i took it out after 40 mins itself.
    This is my recipe
    SR Flour - 1 and half cups
    Sugar - Half cup
    Butter - Half cup
    Vanilla - 1 tsp
    Eggs - 2
    Milk - 50 ml
    cooking soda - 1 tsp
    Chopped Kiwi fruits - 2 (stirred half into mix and scattered half on top of batter as u mentionied)

  30. I read somewhere now that we have to mix the soda finally only, otherwise it wont rise up things much. But i mixed it and after a sometime only i baked the batter. It may be one of the reason, if u find somethingelse, pls. post as a comment

Saraswathi,I do not use self rising flour,so I can't say the results based on that.This recipe requires baking powder and not baking soda,so I think that might be something you'd like to check out.And any baking agent you add to the liquid batter,it starts working,hence you shouldn't keep the batter for long.Bake it immediately.Hope this answers your question!!

  33. I just finished making this recipe and it was out of this world good. I baked the cake in a 7 inch cake pan and it came out perfectly. I used the white chocolate ganache as a glaze and put kiwi slices on top and it was so simple. I recommend putting a lot of kiwi on top of the cake because the flavor of the white chocolate, cake, and kiwi together is AMAZING. Im definitely making this again soon!
