Simple Vanilla Tea Cake


What do you do when you get hold of a favorite magazine?Read it from the first page to the last at one go..?Read your favorite articles first and keep the other ones for later read?I always go through the magazine first and then slowly one by one,read the articles over a period of time.The joy of reading something unread on a really boring day is wonderful..;-).I have a similar approach to some blogs.I have gone through the blogs but I have not gone through each and every post and look forward to reading them when I want to read it..;-).

Sharmi's blog is one of them.I hopped on to her blog long back and barring the ones which she has updated after that(after I started reading)there are very few posts which I have read.I go to her blog and randomly check the posts and come up with wonderful results.I recently baked this yummy tea cake which was really simple as the name says.I was actually looking for a recipe to make using my heart shaped cake-tin and thats exactly what I found in her blog!!

This one goes to my dear uncle R who celebrates his 60th birthday today-Happy Birthday to you!!

Recipe Marathon - Day 12

Simple Vanilla Tea-cake(adapted from Sharmi's blog)

Ingredients

Butter - 1/4 cup
Sugar - 3/4 cup
Egg-1,lightly beaten
Top quality vanilla extract - 2tsp
Flour - 1 cup
Milk - 1/2 cup
Baking powder - 1/2 tsp
Baking soda - 1/2 tsp


Method
Preheat the oven to 180C.
Grease a 6" round cake pan and dust with flour, knocking off the excess.(I used a heart shaped cake-tin)
Beat the butter and sugar until light and creamy.
Add the egg, beating well to avoid curdling. Beat in the vanilla.
Stir in the flour alternately with the milk, until smooth. Spoon into the pan and smooth the top.
Bake for 30 minutes, or until a skewer comes out clean when inserted into the center.
Cool for 5 minutes in the tin, then remove on to a wire rack. Let the cake cool for 10 minutes.

  22. I have IFB 20SC convection microwave. When I try to bake cake in it, It gets burned from the top and middle section is still uncooked and is like hot batter. I have noticed that the top layer starts getting dark brown withing minutes and eventually it burns. Please tell me where am I going wrong. Thanks waiting for your reply.
