Chocolate muffins

Back home in Ekm,right opposite to our house,there is a famous bakery and next to it,there’s a wholesale Bakers&Confectioners shop where all bakery/baking items are sold.Funny,how I never even glanced at that shop when I was there.Its only after I got an oven and took baby steps in baking that I realized what I missed.Last time during my stay in Ekm,I went to that shop almost everyday..wanted to take my time in choosing to buy stuff and bought only one item daily so that I could come back for more.;-)I finally bought back 3 cake tins(a ring mould,heart shaped and a round one),1 cookie tray(which was actually not necessary since I already had one;),muffin pan and paper cups&butter papers.Also bought stuff like baking powder,icing sugar etc.

Once here,I wanted to make muffins first.Searched for a whole lot of recipes and finally decided on Deeba’s vanilla cupcakes.They came out delicious and hubby is all praise for it.After the successful trial,looked for more recipes and came across Sharmi’s recipe.It came out wonderful and I am feeling very proud and content;-).

Recipe Marathon - Day 6

Chocolate Muffins(adapted from Sharmi’s blog)

Ingredients

Eggs - 2
Sugar - 1 cup
Flour - 1 cup
Cocoa powder – 6 tbsp
Instant coffee – 1 tbsp
Baking powder – 2 tsp
Vanilla extract – 2 tsp
Milk – 2/3 cup
Sunflower oil – ½ cup (anything that is tasteless and odourless)
Butter – ¼ cup
Chocolate chips or chunks (optional)-(I did not use)

Method
Pre-heat oven to 180C.
Line a 12-cup muffin pan with paper muffin bake cups.
In a large bowl, beat the eggs with the sugar till well blended.
Sift in the flour, cocoa powder, instant coffee granules and baking powder.
Add the vanilla and milk and mix.Add the oil and melted butter and fold in gently.
Fill each muffin cup with about 2 tbsp batter (till about a third full), then place a few chocolate chips (15-20) or chunks in the centre.
Top up with more batter until the muffin cups are 3/4 full. Bake at 180C for 25-30 minutes or till done.
