Biscuit Pudding ~ Amma's special!

Biscuit Pudding

I first heard about this pudding from a good friend KK.I remember so well,he said he had tasted a yummy pudding made by his friend S and it was simply out of this world.I asked him about the ingredients and he said it had Marie biscuits and chocolate sauce.Well,I was not going to attempt this just with his suggestions so I dropped the idea and completely forgot about this.Thank God for small mercies-call it co-incidence or anything,S happened to be my hubby's first cousin!!Can it get more merrier than that?

I decided to ask S for the recipe first thing when I met her.I was casually telling amma(m-i-l) about this and she asked-"you mean chocolate pudding with marie biscuits?,I make it quite often,in fact S actually follows my recipe"...WOW!!!She made it for me the very next day and I almost finished off half of it.It tasted simply divine..Yummy!!!
 

The best part of this pudding is,it really requires very little time to prepare.Make it,keep in the fridge for chilling and eat it-yes,it is as simple as that!!Amma makes it a point to make it everytime we are in Bangalore coz she knows I look forward to it;-).Thanks ma..!!I am posting it today for exactly that reason.Amma is celebrating her birthday today and what better way to wish her with her signature dish..??!!I have made it many times but I love the one that she makes!!This pudding finds its way whenever there is an overdose of milk or marie biscuits and what better way to polish it off in the form of a pudding..??!!;-)

Biscuit Pudding-Amma's special

Ingredients

Marie Biscuits - 1 pack
Milk - 1 packet ( 500 ml )
Sugar - 5 tbsps,about 1/3 of a cup
Cornflour - 3 level tbsps
Cocoa powder - 3 level tbsps
Coffee decoction - 4-5 tbsps diluted with 2-3 tbsps water OR

Instant Coffee powder - 1 tsp mixed with 5-6 tbsp of hot water
For garnish-Nuts,white chocolate chips,chocolate curls etc

Method

Biscuit Pudding-step1 
Make the coffee dipping liquid.Instant coffee mixed with hot water.
Biscuit Pudding-step2 
Dip the marie biscuits in coffee decoction(both sides) and layer them in a serving bowl.
Finish the whole packet this way.
Biscuit Pudding-step3 
Mix together the cornflour and cocoa powder in a bowl.Add about 1/4 cup of cold milk and make a smooth lump-free paste.Reserve.
Biscuit Pudding-step4 
In a pan,boil the milk and add sugar.
When the milk boils,add this cocoa-cornflour paste and mix well.
It will start thickening immediately,keep stirring.
Switch off the flame when it thickens,but still of pouring consistency(similar to custard).
While still hot,pour it over the biscuits and cover the biscuits all over with this sauce.
Garnish with nuts or chocolate chips.
Refrigerate for 4-5 hours and serve chilled!!

    hey,in ur biscuit pudding post.The second photo seems to be a multiple photos in one image.How did u make it?

  21. Thanks so much for this receipe... The chocolate biscuitpuddings we get here normally have the choc cream in layers between the biscuits... makes the pudding softer and yummier! :D

  23. hi i tried this recipe....but for some reason the moment i mixed the cocoa cornflour paste to the milk.the cocoa pwdr did not mix well.my cocoa pwdr cornflour paste was smooth with no lumps....but it did not mix well with the milk....any idea where iam going wrong...

    1. Parul,try adding small portions of the same into the milk.Maybe add 1 tbsp at a time and give a good stir.I hope you get it right!

  36. We used to make something really similar in our school days! I studied in a boarding school in dehradun: full of rules, and we weren't allowed b'day cakes! SO, we saved all our morning biscuits (we got these really yummy biscuits with milk in the morning), dip them in illegally-sneaked in coffee decoction (EXACTLY!) and layer them in someone's tiffin, after which we would layer it with chocolate fudge and last weekend's saved up dairy milks and kitkats!

    It's a small world :)

I am completely ignorant in cooking matters, yet I have become an addict of your blog and look forward to your emails due to the simplicity of methods described. I was extremely excited when I saw this recipe as it certainly looked really delicious yet simple. I tried this recipe two days ago. Unfortunately the pudding I made was really, really watery. Hi Joyce,thank you for the lovely words of encouragement.So sorry to hear the pudding recipe didn't work for you.Pudding becoming watery could be because of three reasons-did you use full fat milk?did you add the said amount of cornflour and did you cook it for the time specified?I am sure you will get it right,keep trying!

  38. hi divya... i made this pudding last week.. it was so easy yet yummy... a very good dessert after meal... my son liked it a lot & asked me now to make it again but i dont have marie biscuits right now so postponed it tomorrow... marie biscuit is the perfect choice as other biscuits would turn mushy when dipped in coffee decoction... coffee really enhances the flavour a lot.. i personally love the coffee smell very much...

  39. Just love ur blog... I've bookmarked several recipes to try... Tried this one over the weekend for dessert after lunch, and it turned out to be yum. The mixture was slightly loose, and hence the biscuits pushed up, however, after setting, it became nice and creamy and at the end, the result was yum!!! Thank you and keep up the good work!!! :)

  44. Hey Divya, This is Zarine, Ajay's classmate from school, if you remember I had written a while back here:-) I made this three times in a row and it was a big hit. It even reminded me of tiramisu! (I know it sounds like a stretch). Once I made the mistake of cooling it in the fridge overnight and it was a bit dry, but still very good.

Thank you Zarine,I remember you!Yes,this is one of Ajay's moms masterpiece dishes and gets a thumps up every time I serve it during a party.Glad it is a hit with you too.If you are refrigerating the pudding overnight,cover it with a clingwrap or use an airtight container to set the pudding in.Would you believe if I said I made the pudding right after reading your comment?Have updated the pictures too,so thanks once again:)

    im using full fat milk.. do i need to change the proportions of the ingredients?? i made it twice but it wasnt setting well withe exact proportions

    1. Not setting well is I am assuming not jiggly enough,right?Is the pudding still liquidy after refrigeration?It could be either because of the lesser quantity of cornflour used or lesser time of cooking after you add the cornflour mix to the milk.

Hi Divya....well I like ur easy to do recipes and i am fond of desserts....and my kid too like them...i tried this recipe of urs and my kid really ate one full bowl and invited his freinds to share....only thing that went wrong is i felt ...though i dipped biscuits in coffee decoction and poured the liquid mix over it ...and set it in the fridge...the biscuits were still crunchy while eating.... the liquid mix of cornflour+cocoa+milk didnot get inside the biscuits and made it soggy or creamy...was it right ....though the taste was yummy... i don't know if i am wrong... what should be the biscuits consistency in the pudding...soogy or left crucnhy...pls suggest

    1. Thanks Aradhana.The texture of the biscuits should be soft,not soggy but definitely not crunchy.Did you dip the biscuits fully in the coffee decoction and was the milk-cocoa mix hot when you poured it over the biscuits?I hope you try it again :)

  52. Which milk should we using for the perfect consistency? And the milk added to the cornflour is a portion of the 500ml milk we were duppose to you? :) looking forward to try :D

    1. I use normal pasteurized milk,2% fat.Yes the recipe requires 500 ml milk of which you should set aside around 1/4 cup milk before boiling and mix that with the cocoa-cornflour and make a paste.Hope this helps!
