Peanut masala for Monthly Mingle



When I saw this month's theme for Monthly mingle,I immediately knew what to post.Peanut/Groundnut masala..ideal as a starter and healthier too.Unlike those fried starters,these peanuts would not send you on a guilt trip..!!I have always loved peanuts,plain -salted.Hunger pangs?Have a handful of peanuts and you are done.The fact that these can be easily made in a microwave in minutes makes you want it more!!My vanni and ma-in-law planned to include this is in the menu for the get together party at home,in Bangalore.But the party started quite late and this was not served.It seems,this dish is also called 'Raja masala",have no clue why its so called though.

Our cousin's wife,Vinny took us to her father's restaurant Unicorn[Infantry road,Bangalore] for a family lunch.She suggested I order this,since everyone else were having non-veg starters.It was absolutely yummy and I just couldn't stop having it.When I asked for the recipe,I realized it was the simplest of all..decided to try it the moment I landed back in Chennai.It came out well,as good as the restaurant one and I am so happy about that!!Do try it as a healthy and guilt free starter!!!



Peanut/Groundnut masala

Ingredients


Peanuts/Groundnuts - 100 gms(salted and roasted)
Onions - 1,finely chopped
Red chilly powder - 1 tsp
Salt to taste
Coconut oil - 1 tbsp
Juice of 1/2 a lemon
Coriander leaves - for garnish

Method

In a pan add onions,red chilly powder,salt and coconut oil and mix well with hands until completely blended.
Add the peanuts and mix well.
Add a dash of lime juice,garnish with coriander leaves.
Serve immediately!!

To roast peanuts in MW -


Apply salt and sprinkle some water on the peanuts and keep aside for 10 minutes.
MW on full power(100 %) for 5 minutes.
Mix well,check if done.If not,keep again for 2 minutes and wait for it to cool down.
Delicious roasted peanuts are ready!!

    Looks so delicious.
    I am going to try this once when i have guest.
    It is safer for me to make when i have guests , then i won't eat the lot :-)
